Simple Greek Salad
This salad goes especially well with the falafel and hummus, but is also a great addition to any summer BBQ. It is super easy to make and most people will have the main ingredients in their kitchen. Feel free to add feta, olives, or capers. I typically add sliced kalamata olives to mine but leave them out of the big batch as the hubs isn’t a fan. This is enough for about 3-4 servings as a side dish.
What you’ll need
1 bell pepper, chopped
1 large cucumber or 3 mini cucumbers, chopped
1 pint grape tomatoes, cut in half ( I am a huge fan of the wild wonders medleys and find they last much longer than your regular tomatoes)
1/4 of a red onion, chopped
1Tbs olive oil or avocado oil
2Tbs red wine vinegar
handful of fresh parsley, chopped
squeeze of a lemon ( ill just typically cut off 1/4 to 1/3 of the lemon and use that)
pinch of salt, black pepper, dill, and oregano
Directions:
1) Add chopped veggies to a bowl
2) Squeeze lemon juice over the veggies
3) Add olive oil, vinegar, and spices
4) Mix to combine
5)Add additional toppings if desired ( feta/olives).
6) Let chill in the fridge until ready to serve. Keeps for 3 days in an airtight container in the fridge.
